BALIKUTSA (coconut toffee candy)

  My childhood as I remember especially during schooldays involved me being a very young entrepreneur. I would sell anything what came into my mind that is very profitable at a low cost. One of the best small business I had was selling BALIKUTSA. At first it was my aunt who showed me how to make a very soft chewy balikutsa.She would make a hundreds of it and  I would picked it up before going to school but then I became confident of making it by myself. I can still remember how my tooth ache so bad,As you know its not the healthiest dessert but to tell you its so damn satisfying and of course my earnings doubled as how much I spend to buy the ingredients.

What is BALIKUTSA ? 

    Its main ingredients are coconut milk ,black sugar(kinugay) and secondary ingredients are vanilla for flavoring and peanuts if desired.

How to make BALIKUTSA 

      It is handmade though needs a lot of effort and very easy to learn.

First  extract the coconut milk from the coconut meat ,You must have at least 1 liter of pure coconut milk .In a big pot or kawa mix it with black sugar and keep on stirring constantly over a medium heat until it thickens.

Because it is extremely hot we then pour it in a banana bark or banana leaf .While waiting for it to cool down prepare cellophane or colored paper for wrapping.

 Cut it in a square enough to wrap the balikutsa.Check if it can be mold already with your bare hands.

Its very important that you familiarize the proportion of the coconut milk and the black sugar .And make sure to wash your hand before making the balikutsa for hygiene of course.

And here is the finish product ,I would love to make it again one of this day and I would love to teach my daughter how to make it ,pass a piece of my childhood to my offspring 😊.
